Fruit Empanadas
Tortillas can have a sweet side too when stuffed with cheese and sunny apricots or exotic tropical fruit.
Preparation time: 35 minutes Serves:10 cooking time: 50 minutes
Ingredients
oil, for deep-frying
icing sugar
225g plain flour
10ml baking powder
a pinch of salt
55g ghee
10 ripe apricots and stoned or 450 canned apricots, well drained
450g cream cheese
Method
1For the tortillas, sift the flour, baking powedr and salt into a bowl.
2Divide the dough into 10 evenly sized pieces3Heat some oil in a dep saucepan or deep fat fryer to a depth of at least 5cm4Cut the apricots into quarters and the cheese into 10 evenly sized pieces.5Fry one empanada at a time until golden on both sides.
